Cleaning & Maintenance of The CTE Avirnaki Smoke Elimination Cabinet

Tools and Materials Required

Maintenance Schedule

  • After each roasting session: Clean the carbon filter.
  • Weekly: Clean the cabinet interior.
  • Every 50 roasts: Clean the trapping field cells and chaff & dust filter.

Cleaning the Carbon Filter (After Every Roasting Session)

Remove and vacuum both sides of the carbon filter. (located at the top of the cabinet)

Important: Do not wash the carbon filter with water or green clean.

Note: If the roasting odors are becoming more and more noticeable each time you roast, it’s time to replace the carbon filter. Please contact your distributor for replacements.

Cleaning the Cabinet Interior (Weekly)

Step 1: Remove the carbon filter (top), trapping field cells (middle) and the chaff/dust filter (bottom) from the cabinet.

Step 2: Vacuum the bottom of the cabinet to remove any loose chaff and dust.

Step 3: Spray the inside surfaces of the cabinet and door with green clean – wait 5 minutes and wipe with a damp cloth.

Step 4: Dry well before re-using the machine.

Cleaning the Trapping Field Cells (Every 50 Roasts)

Soaking is not washing… You need to follow the 5 steps outlined below for the proper cleaning of your Avirnaki to keep it operating at full capacity for many years.

Step 1:

Slide out the Trapping Field Cells that need cleaning

Step 2:

Use a pressure washer with cold or slightly warm water to clean all interior surfaces on both sides of the cell. (100-135 bar / 1500-2000 psi)
Note: To avoid damage to the trapping field cell components, do not use hot water and do not use a brush or abrasive cloth at any point!

Step 3:

Spray on the green clean solution evenly on all sides and wait 3-5 minutes.
Note: Always stand the cell up with the black plastic part at the top to avoid damage.

Step 4:

Thoroughly rinse the applied green clean with the pressure washer.
Note: Do not use a brush or abrasive cloth for any cleaning!

Step 5:

Inspect and let the Trapping Field Cells dry before sliding back into the Avirnaki Cabinet.

Common mistakes when washing the Trapping Field Cells:

Black smoke residue or dust residue remains in the center of the cell between trapping fields even after cleaning. Ensure you are pressure washing and spraying the green clean thoroughly on all surfaces on the inside of the cell.

What to do in severe cases:

If your Avirnaki has been neglected for a long period of time and the residues do not come off with the normal cleaning protocols described above, soak the trapping field cells overnight (12 hours) in a solution of:

  • 15l (4 gallons) water
  • 500ml (1/2 quart) vinegar
  • 250 grams (1/2 pound) sodium carbonate

After soaking overnight, proceed with all the steps listed for the normal cleaning process.

If you clean the cells properly at the recommended intervals, they will stay clean forever, as seen in the 4-year-old cell of step 5.

This video is of an improperly cleaned cell that needs overnight soaking to loosen the built-up residues. Notice the color of the aluminum is not bright!

Cleaning the Chaff & Dust Filter (Every 50 Roasts)

Step 1: Slide out the chaff & dust filter from the bottom of the cabinet.

Step 2: Pre-rinse with a pressure washer.

Step 3: Spray with green clean on both sides and wait 3-5 minutes before thoroughly rinsing with a pressure washer.

Make sure to clean the bottom of the cabinet before sliding the filter back into the lower cabinet in the same orientation.

The blower speed setting should be just above the ten o’clock mark, as indicated by the black mark on the panel. This slow speed prevents smoke from being emitted into the room.

Excessive blower speed also shortens the life of the carbon filter and excessively fouls the trapping cells.
